Happy Monday, everybody!
I hope you all had a wonderful 4th of July weekend. I had both a busy and relaxing holiday, with time for both cooking/hiking as well as reading a book while having the house to myself.
Friday, I went on a hike to Robert H. Treman State Park. It was a little over a 4 mile hike, but surprisingly strenuous! The first half was mostly uphill with a lot of really challenging stairs, and then the second half was downhill with some really great views through the gorge.
After our hike we stopped at Wegman’s to grab some lunch. I got a chicken pesto sandwich on ciabatta and some Black and Blue juice to drink. This is one of my favorite types of juice! It’s tart and sweet and really refreshing.
After a good nap I made these amazing smore’s bars from Delish! Seriously, these are one of the best rice krispie treat style desserts I’ve ever had and I actually think they might be better than a real smore. And they were so quick and easy to make, I just might make them again for a cookout next weekend!
Saturday was pretty relaxing. I slept in, went and hung by the pool with some family for a couple of hours then spent the rest of the day on the couch with a good book. I grilled some chicken and made this amazing garlic parm cheese sauce for my Banza pasta shells. This recipe is definitely a keeper, I’ll have to make a recipe post in the future.
Sunday, I did a quick grocery shop for some produce and other little things I needed then I went for a bike ride. I did about 9 miles, just casual and it was really nice! I haven’t biked at all yet this summer so it was nice to be reminded of how much I enjoy it. I’m going to try to get out at least once a week!
Overall, it was pretty lowkey for a holiday weekend. I’m not much of a drinker/partier and I really needed the down time so it was nice to just get outside and also relax by myself this weekend.
